Recipe for Tempura dipping sauce

Tendashi dipping sauce is served warm in a small dish on the side. The classic recipe for tendashi is four parts dashi, one part mirin and one part koikuchi shoyu (dark soy sauce), garnished with grated daikon and grated ginger. The daikon and ginger may be grated on a traditional oroshigane or on the fine side of a western box grater. Adjust the quantity according to your needs.

4cups dashi (see recipe below)
1cup mirin
1cup koikuchi shoyu (dark soy sauce)
grated daikon
grated ginger
