For kids and adults alike, serve hamburger prepared Chinese style with oyster sauce and mushrooms. The ideal way to prepare this dish is to get the surface crispy and the inside soft and juicy. The key is to knead the minced beef until it becomes sticky. If you need an idea for using up the remaining oyster sauce, try it on fried chicken.

1 lb. minced beef
4 oz. canned straw mushrooms
(may substitute shiitake mushrooms)
1/4 onion
Potato starch
1 egg
2/3 teaspoon salt
4 tablespoons Chinese rice wine
1 tablespoon soy sauce
2 tablespoons negi oil or oil
1 tablespoon sesame oil

2 tablespoons oyster sauce
1 teaspoon ketchup
1 teaspoon tomato sauce
1-1/2 cups soup

2 tablespoons oil
1/2 head of broccoli, broken into
flowerets and boiled
1/2 tablespoon potato starch dissolved in
1/2 tablespoon of water


Slice the straw mushrooms thinly.

Mince the onion, put it in a bowl, and sprinkle with a little potato starch. Mix lightly.
Tips Use just enough potato starch to coat the surface of the onion. This will prevent the onion from becoming watery.

In another bowl add the minced beef and all the ingredients in [A] except the oil. Mix together well. Add the egg and knead with the palm of your hand until the beef turns sticky.
Tips Strongly kneading the mixture will cause minced beef to absorb the seasonings and moisture from the egg, thus producing a softer texture.

Gently mix in the onions (do not knead). Add negi oil and sesame oil and knead lightly. Divide mixture into 8 portions. Lightly coat your hands with additional oil and shape the mixture into thick ovals.
Tips Use the oil to prevent the meat from sticking to your hands.

Heat a wok or frying pan on high heat and add the 2 tablespoons of oil. Make an indentation in the center of each oval, then cook on both sides.
Tips Make sure the oil is very hot before adding the meat. If the oil isn't hot enough, the surface will not harden and the juice will flow out. The indentation will help ensure that the beef patty cooks throughout.

When the hamburger browns, add straw mushrooms and the ingredients in [B], cover and cook on low heat for 7 - 8 minutes. When the meat is cooked through, thicken the sauce by adding the 1/2-tablespoon potato starch dissolved in 1/2-tablespoon of water.
Tips Pierce the hamburger with a bamboo skewer. If clear juice runs out, it's done.

Serve on a plate and garnish with the broccoli.
