Cappuccino meets pannacotta. The secret ingredient is Kalhua, the popular Mexican coffee liquor. Kahlua adds just the right amount of sweetness-plus richness-to the pannacotta. Serve this dessert to your favorite guests in tall clear glasses so the layers of cream are clearly visible.

300cc fresh cream
300cc milk
1.5 teaspoons instant coffee
2 oz. honey

1 oz. Kahlua
1 egg white
1 tablespoon granulated sugar
50cc fresh cream
3 gelatin sheets (approx. 1/2 oz.)
--may substitute powder gelatin
Cinnamon powder

・ Soak the gelatin sheets in water. Put the appropriate amount of water in a bowl, cut the gelatin sheets to fit the bowl, and leave them to soak.
Tips Soak the gelatin sheets well or they will not melt properly when cooked. If you use powder gelatin, it should be soaked first in water too.

Mix [A] in a pan with a wooden spatula over high heat until it boils. Take care to prevent it from bubbling over. Remove from heat.

Remove the soaked gelatin from the water and add to pan.
Tips If the temperature is too high, the gelatin will not harden properly, so be sure to remove the pan from the flame before adding the gelatin.

Stir in the gelatin thoroughly with a wooden spatula, then strain the entire mixture into a bowl. Set this bowl inside a larger bowl filled with ice water. Slowly stir with a rubber spatula until the mixture cools.

When the contents thicken, stir in the Kahlua. Pour into tall serving glasses. Set in refrigerator to cool and harden.
Tips Wait until the mixture is thick and cool before putting the glasses in refrigerator, otherwise it will take longer to harden.

Add sugar a little at a time to egg white and beat until 80 percent stiff.
Tips Make sure bowl is completely dry or else the egg whites will not whip up properly.

Beat in 50cc of fresh cream. Beat until the cream stands up straight when the beater is lifted. Add to beaten egg white.

Pour egg white and cream mixture over Kahlua mixture and sprinkle with cinnamon powder before serving.
